1 yam, peeled and diced
1 tablespoon olive oil
3/4 pound ground turkey
1/2 cup chopped sweet onion
1 clove garlic, minced
4 jalapeno peppers, seeded and minced
1 tablespoon chili powder
1 teaspoon ground cumin
1/2 teaspoon Cajun seasoning
1/2 teaspoon salt
1/2 cup tomatillo salsa
chopped fresh cilantro for garnish
warm flour tortillas
Put the diced yam in microwave until cooked through and fork-tender, stirring once. (5-7 min)
Coat the bottom of a large skillet with olive oil and place over medium heat; cook and stir the turkey until crumbled and evenly brown, 5 to 7 minutes. Stir the onion, garlic, and jalapeno pepper into the turkey and continue cooking until the onions begin to caramelize.
Season with the chili powder, cumin, Cajun seasoning, and salt. Pour the salsa over everything; fold the sweet potatoes into the mixture. Allow the mixture to cook until the excess moisture evaporates. Garnish with the cilantro. Serve with the warm tortillas.
Add sour cream if you like!

Baked Fish Creole
Ingredients
3 cups water 1 1/2 cups uncooked white rice 1/4 cup butter 1 onion, chopped 1 clove garlic, minced 2 stalks celery, chopped 1 green bell pepper, chopped 1/4 cup all-purpose flour 2 cups milk 1 teaspoon salt 1/4 teaspoon ground black pepper 1/2 teaspoon hot pepper sauce 1/2 cup chili sauce 1 pound cod fillets 2 tomatoes, sliced
Directions
Preheat oven to 400 degrees F (205 degrees C). Lightly butter a 9×13 inch baking dish. In a saucepan bring water to a boil. Add rice and stir. Reduce heat, cover and simmer for 20 minutes.
In a Dutch oven, melt the butter over medium heat. Add the onions and garlic. Cook until tender about 4 minutes. Add the celery and pepper. Cook for 3 minutes. Do not brown add the flour and stir well. Cook for 3 minutes.
Stir in the milk and bring just to a boil. Season with salt, pepper and hot sauce. Stir in the chili sauce. Taste and adjust seasoning.
Place rice into the bottom of the prepared pan. Arrange the fish fillets over the rice in a single layer. Place the sliced tomatoes over the fish and pour the sauce over the top.
Bake at 400 degrees F (205 degrees C) for 20 minutes or until fish is just cooked and flakes easily with a fork.

Wow! My grandmother use to make us chicken and dumpling all the time for dinner! It also took her hours to prepare and make. I love they way you care for Lamar, your what my uncles would call a “through back” kind of women that they don’t make any more. You don’t find many women spending that much time in the kitchen however; I think it’s fab! Keep taking care of that man and in return he will take care of you. I love it!

One of my favorite recipes that my kids always ask me for are Chicken Croissants. Trust me…you will want to make these all the time…but beware that before you realize it you’ve eaten a whole batch!! I hope you try them and enjoy them like me and my kids do!!
Note: work with the measurements of the spices…I don’t measure anything with this recipe anymore I’ve made them so long
Chicken Croissants
1 whole chicken or 3-4 large chicken breasts
3 pkg Philidelphia Cream Cheese (store brands don’t taste the same)
1-2 c frozen chopped broccoli (depends on how “broccolli-y” you want them)
1/4 c dried chopped onion (fresh onion adds too much water)
2-3 t garlic salt
2-3 t parsley
3 pkg refridgerated crescent rolls ( tried making them once…disaster! LOL)
Preheat oven to 375. Boil the chicken until cooked through. Using a fork, shred the chicken. Put into large bowl. Rinse broccoli under warm water until thawed out. Chop into smaller pieces. Add broccoli, cream cheese, onion, and spices to the chicken. (Now here’s where the kids…with clean hands of course lol…LOVE to get involved). Mix all ingredients with your hands. (It’s messy but really fun!) Take one crescent roll and press it out with a rolling pin. Spoon chicken into middle of the dough. Fold sides around the chicken making sure to not leave any holes. Place on baking sheet and bake for 30min or until golden brown.

* Fresh ground pepper to taste
Directions:

2. Prepare a large saucepan with 1 tablespoon of butter. Add the butter and pepper to the saucepan, then add the prepared fettuccine. Add the cream to the mixture and heat until it thickens. Add the mushrooms and cheese to the mixture, heating throughly and tossing the mixture frequently. Melt the cheese entirely, then serve.
Heat oven to 425 degrees F.
Beat 1/2 cup milk, sour cream, and 3 tablespoons sugar in large bowl with whisk until well blended. Stir in baking mix just until moistened. Spread onto bottom of greased 9-inch round pan. Bake 12 to 15 minutes or until golden brown. Remove from pan to wire rack; cool completely. Cut horizontally in half, using toothpicks as a guide.
Add remaining milk to pudding mix in medium bowl; beat with whisk 2 minutes. Stir in half the Cool Whip®. Toss strawberries with 1/3 cup sugar.
Stack cake layers on plate just before serving, spreading the pudding mixture and 1/2 the strawberry mixture between layers. Top with Cool Whip® and remaining strawberry mixture.
